Head Sommelier – Luxury Mega Yacht

The Head Sommelier’s primary responsibility is to manage all aspects of the beverage operations with a focus on beverage service in the restaurants and bars. One key area is to maintain a world class beverage program comprising the master and destination wine list, sake list, bar list and cigar list. When relieving the Beverage Manager, the Head Sommelier’s primary responsibility is to manage the entire beverage operations to ensure high standards are achieved and maintained within the budgetary limitations.
Responsibilities
– Responsible to supervise all beverage operations and team, wine cellar management and beverage sourcing for the Ship.
– Strategically partner with the Executive Chef and F&B Director on all aspects of The World’s dining and culinary experiences
– Support the Beverage Manager in organizing onboard dinners, tasting events and Guest lectures for Residents and Guests featuring wine makers, master distillers and mixologists
– Assist Beverage Manager in organizing and leading bespoke “Resident Exclusive” visits to wineries and distilleries
– Assist Residents and Guests in their choice of beverage and promote all products of the beverage program (wine, cocktails, spirits, sake, cigars)
– Maintain full oversight of the stock on hand and par stock levels in all Bars and Wine vaults.
– Oversee physical stock takes and prepare an action plan for depleting slow moving items
– Ensure daily depletions match actual sales and charges correctly applied to accounts
– Assist the Hotel Inventory Team with the planning of beverage orders and assist with the organization of the main cellar
– In the absence of Beverage Manager, meet with Residents and assist with planning events and cocktails.
– Continuously review the operation and make recommendations to enhance the product; follow up and resolve Resident and Guest issues; conduct regular in-depth inspections of all operational areas; Submit AVOs and ICANs; follow up on relevant ICANs relevant to the division
– Contribute to the development of the onboard product and our commitment to “bringing the destination alive” by creating and delivering events and experiences for Residents and Guests
– Conduct scouting visits to upscale bars and destination inspired wineries to incorporate learnings into Beverage Team training on product knowledge and new trends
– Ensure inventory reports and “End of Month” reports are completed in a timely manner
– In the absence of Beverage Manager, carefully review the final edits of onboard publications, menus and collateral
– Acknowledge and record and communicate Residents’ preferences
– Manage a range of operational software systems such as Infogenesis-POS, restaurant reservations, Resident preferences, Fidelio, MMS and Launch Partners
Hiring Requirements
• Able to read, write and speak fluently in English
• Degree in Hospitality Management or related field preferred
• Sommelier certification with CMS, level 3 with WSET or a Professional Diploma from a well-recognized Wine School required
• Minimum of 3 year’s relevant experience on a luxury cruise ship, in a private country club or similar, luxury hotel or resort
• Previous supervisory experience required
• One additional language (German, French, Italian, Spanish) preferred
• Good computer skills to include Word, Excel and Outlook
• Good knowledge on Mixology is required.
• Strong administrative and organizational skills
