Beverage Manager

The Beverage Manager’s primary responsibility is to manage all aspects of the beverage operations (Wines and Mixology), sourcing products, conducting research and development, and establishing valuable connections with vendors and wine makers. The Beverage Manager is responsible for the purchasing strategy of the Beverage Program products, collating an avant-garde beverage portfolio of cocktails, spirits and wine selections, keeping abreast with the latest trends in the industry.
OPERATIONAL MANAGEMENT
Beverage Operations
- Responsible for overall Beverage operations, wine cellars and wine sourcing for our award-winning Wine List
- Strategically partner with the Executive Chef and F&B Director on all aspects of The World’s dining and culinary experiences
- Organize on-board dinners, tasting events and Guest lectures for Residents and Guests, featuring wine makers, master distillers and mixologists.
- Developing world class cocktail program brining destination, seasonal and modern ideas to the operations.
- Oversee physical inventories and prepare an action plan for slow moving beverage items.
- Assist the Hotel Inventory Team with the planning of beverage orders and assist with the organization of the Main cellar on a weekly basis.
Resident and Guest Services
- Meet with Residents and assist with planning events including cocktail parties.
- Exceed Resident and Guest expectations in every aspect of luxury service in accordance with Leading Quality Assurance (LQA) standards. Conduct regular operational trainings.
- Continuously review the operation and make recommendations to enhance the product; follow up and resolve Resident and Guest issues; conduct regular in-depth inspections of all operational areas; Submit AVOs and ICANs. Follow up on relevant ICANs relevant to the division.
- Conduct visits to upscale bars and destination inspired wineries while onboard to establish contacts and plan exclusive events for our Resident community offering as DE.
- Administrative assistance only to the Grand Prieur for Meduse shoreside events. Beverage Manager is required to escort the Residents to the event.
- Responsible for onboard Meduse events and assist the Grand Prieur and F&B Director in coordinating the event specifics.
Administrative Tasks
- Conduct research and development to stay abreast of trends, using the information to design future strategy for the development of the beverage products.
- Contribute to the development of the on-board product and our commitment to “bringing the destination alive” by creating and delivering events and experiences for Residents and Guests
- Responsible for sourcing industry experts to provide training in wine and mixology.
- Establish and maintain strong relationships with wine makers and beverage producers around the world.
- Carefully review the final edits of onboard publications, menus, and collaterals
- Develop, monitor and achieve company, department and divisional goals and objectives; effectively communicate operational updates through daily line ups and divisional meetings.
- Create / revise Standard Operating Procedures (SOP) and Job descriptions as needed; develop and execute punch lists and operational action plans.
- Research and Development of the Beverages (Wines, Spirits, Beers) according to the luxury standards. Establishing contacts with the wineries to discuss the availability of wines.
- Connecting the contacts to the procurement team at the Florida office for further price negotiations and delivery logistics discussions.
- All shoreside events for ex: Bordeaux winery events coordination and execution. Must coordinate the planning together with Destinations team at the Florida office and The World Concierge to avoid clashes and to integrate the planning into Navigator app for Bookings.
- Prepare the monthly training calendar for the team; use the Resident Satisfaction Survey results to determine training topics and include those topics to minimize service gaps; document training progress by updating the Monthly Training Calendar’s respective column.
- Supervise, coach and train all bar staff and assist them with their duties.
- Ensure validity of an eTIPS certificate and adhere to the responsible service, sale and consumption of
- Ensure all areas are maintained in accordance with Company Policies, Public Health, Safety Management System (SMS) and Safety & Environmental regulations; execute policies and procedures as appropriate to the position; execute safety duties as per the Emergency Plan and Station Bill, participate in In Port Manning as required.
- Participate in Public Health inspections together with Senior Management
- Assist with Ship tours, Zodiac landings, Marina days, Expeditions, and other activities when required.
FINANCIAL MANAGEMENT
General
- Develop, manage and adhere to the hotel operating and revenue budgets; contribute to the Ship’s 10-year financial plan, submit monthly financial reviews and forecasts.
- Place orders according to the provisioning schedule and based on budgetary guidelines; maintain par stock levels; minimize waste and breakage.
- Manage manning par levels and send the recommendations to F&B Director for Vacation plan updates in a cost-effective manner, monitoring overtime and ensuring team members are scheduled according to operational needs.
- Create the yearly Training Wishlist; monitor the monthly training budget and provide reforecast in the monthly Financial Report.

Hiring Requirements
- Minimum of 5 years’ relevant experience on a luxury cruise ship, in a private country club or similar, luxury hotel or resort
- Degree in Hospitality Management or related field preferred
- Certification at the court of Master Sommelier or Advanced WSET Level 3 preferred
- Good knowledge on Mixology required
- Experience working in a multi-cultural environment
- Excellent administrative and organizational skills
- Good computer skills to include Word, Excel and Outlook
- Working knowledge of point of sales systems, inventory management systems, Fidelio and computerized reservation systems
- Able to read, write and speak fluently in English
- One additional language (German, French, Italian, Spanish) preferred
