Sushi Chef – Luxury Mega Yacht

The Sushi Chef is primarily responsible for preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish, and placing orders for supplies as needed. This position should ensure that all ingredients used in dishes are of the highest quality in terms of freshness, taste, and consistency. The Sushi Chef should possess strong knowledge and preparation skills in classic and modern Sushi and Japanese Cuisine.

Responsibilities

  • Prepare and plate classic and modern Japanese Sushi dishes
  • Adhere to all recipes
  • Report work orders to the Chef de Cuisine/Sous Chef
  • Assist with the development and maintenance of appropriate par stocks for food products and equipment based on current needs and upcoming functions
  • Taste all foods to ensure correct preparation
  • Work to decrease the stock of slow moving items
  • Review all food related costs and consumptions in accordance with financial targets
  • Assist in achieving the budgets by minimizing waste and breakage and maintaining proper handling procedures
  • Communicate with the Sous Chef regarding culinary matters
  • Acknowledge Residents’ preferences and ensure all changes are communicated to the team
  • Exceed Resident and Guest expectations in every aspect of personalized service in accordance with Leading Quality Assurance (LQA) standards

Hiring Requirements

  • Minimum of 3 years’ relevant experience on a luxury cruise ship, private country club or similar, luxury hotel or resort
  • BA/BS 2-3-year Culinary Degree (or foreign equivalency) preferred
  • Certification in Sanitation and Public Health
  • Strong knowledge and preparation skills in classic and modern Sushi and Japanese Cuisine Working knowledge of inventory management systems and Fidelio
  • Strong public speaking skills and demonstrations skills
  • Experience working in a multi-cultural environment
  • Good organizational skills
  • Good computer skills to include Word, Excel and Outlook
  • Able to read, write and speak fluently in English
  • One additional language is preferred
